Our Tomato Standard
We start with premium canned whole San Marzano-style tomatoes — the gold standard for pizza sauce. These plum tomatoes are grown in volcanic soil and have a natural sweetness and low acidity that makes them perfect for sauce without needing sugar correction. We hand-crush them rather than pureeing, which preserves a slight texture and keeps the flavor bright and fresh-tasting rather than cooked-down and heavy.
