The biggest mistake in wing preparation is under-rendering the fat under the skin. Chicken wings have a significant fat layer beneath the skin that must be cooked out fully to achieve crispiness. If you pull wings out too early, the fat remains and makes the skin soft and greasy. Most restaurants either don't know this or don't have time to do it right. We do it right — every time.
